Hello all you healthy eating readers!
I have a delicious and simple recipe for you today. Well actually its not a “recipe” just guidelines for you to use your imagination.
First of all, I have discovered coconut rice. It has rocked my world. I use brown rice and coconut cream. If you have a rice cooker its easiest but I am sure you could do it on the stove top. I just put in the brown rice and a few scoops of coconut cream and then lots of water and off you go! You will be able to smell the yummy coconut while its cooking.
While the rice is cooking I stir fry up some veggies I had in my fridge. You only need to use a little bit of olive oil. You can use whatever veggies you want and you could also use some chicken or beef to add some protein.
When everything is done you combine the two and VOILA, a rich, delicious and healthy lunch!
